How to Make It

1. Step
In a large mixing bowl or food processor, dissolve the yeast, brown sugar, salt, and warm water. Let sit for 5 minutes until foamy.

Add the bread flour, whole-wheat flour, olive oil, and wheat gluten to the yeast mixture. Mix by hand or with a dough hook for 5-10 minutes until a smooth dough forms and pulls away from the bowl.

Lightly coat the inside of the bowl with cooking spray. Cover with plastic wrap and place in a warm area for about 1 hour, until the dough doubles in size.

Punch down the dough and divide it into 14 equal pieces. Roll each piece into a long rope.

Shape each rope into a U shape, then cross the ends over each other and pinch them at the base of the U to form a traditional pretzel shape.

Bring 8-10 cups of water to a boil in a large pot and add 1/4 cup baking soda.

Add the pretzels one by one and boil each for 30 seconds. Remove with a slotted spatula and place them on a parchment-lined baking sheet.

Brush the pretzels with egg white or an egg substitute. Sprinkle with sesame, poppy, or sunflower seeds if desired.

Bake in a preheated 450°F (230°C) oven for 10-15 minutes, until the pretzels are dark brown.

Let cool for a few minutes before serving. Enjoy warm or at room temperature.
