How to Make It

1. Step
Preheat the oven to 400°F (200°C) and prepare a nonstick baking sheet.
2. Step
In a large bowl, combine the whole-wheat flour, all-purpose flour, wheat germ, baking soda, and salt. Whisk to blend.

Add the buttermilk and the beaten egg to the dry ingredients.

Stir the mixture just until moistened. The dough will be sticky.

Turn the dough onto a generously floured work surface.

With floured hands, gently knead the dough 8 to 10 times to form a loose ball.

Place the dough on the prepared baking sheet and shape into a 7-inch round.

Dust the top with a small amount of flour.

Cut a large 'X' into the top of the dough, about 1/2 inch deep.

Bake for 25 to 30 minutes, or until the bread splits open at the 'X' and sounds hollow when tapped on the underside.

Transfer the baked bread to a wire rack and let cool for 2 hours before slicing.

Slice and serve with jam or your favorite spread.

  • 1/2 cup wheat germ
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 cups low-fat buttermilk
  • 1 egg, lightly beaten
