How to Make It

1. Step
Prepare a hot fire in a charcoal grill or preheat a gas grill or broiler. Lightly coat the grill rack or broiler pan with cooking spray, positioning it 4 to 6 inches from the heat source.
2. Step
In a small bowl, whisk together 2 tablespoons dark honey, 1 tablespoon olive oil, 1 tablespoon fresh lime juice, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground cloves to create the marinade.
3. Step
Cut off the crown and base of a firm, ripe pineapple. Stand the pineapple upright and, using a sharp knife, remove the skin in long, vertical strips, eliminating the small brown 'eyes' as you go.
4. Step
Lay the peeled pineapple on its side and cut it into 8 long wedges. Remove the core from each wedge and cut each wedge crosswise into three pieces. Thread three pineapple pieces onto each of the 8 wooden skewers (pre-soaked in water for 30 minutes) or metal skewers.

Lightly brush the pineapple skewers with the prepared marinade.
6. Step
Place the skewers on the grill and cook, turning once and basting with the remaining marinade, until the pineapple is tender and golden, about 5 minutes per side.

If desired, brush the grilled pineapple with 1 tablespoon dark rum and sprinkle with 1 tablespoon grated lime zest before serving. Serve hot or warm.
