How to Make It

Preheat the oven to 375°F (190°C).

Wash the potatoes thoroughly and pierce each several times with a fork.

Place the potatoes directly on the oven rack and bake until the skins are crisp and the flesh is tender, about 1 hour.

Carefully remove the potatoes from the oven. Allow them to cool slightly.

Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/8 inch of the potato flesh attached to the skin. Reserve the scooped-out flesh for another use.

Spray the inside of each potato skin with butter-flavored cooking spray.

Sprinkle minced fresh rosemary and freshly ground black pepper over the interiors.

Return the potato skins to the oven and bake for an additional 5 to 10 minutes, until they reach desired crispness.
