How to Make It

In a microwave-safe bowl, combine rolled oats and water. Microwave until the mixture reaches 120°F to 130°F.

Fit a stand mixer with a dough hook.

In the mixing bowl, combine whole-wheat flour, soy flour, ground flaxseed, flaxseeds, sesame seeds, poppy seeds, yeast, and salt. Mix by hand or on low speed with the dough hook.

Add the applesauce, honey, and olive oil. Mix by hand until combined.

Add the heated oat mixture and mix again by hand.

Start mixing with the dough hook on low speed for about 3 minutes.

Slowly add the white flour until the dough comes away from the sides of the bowl and becomes smooth and elastic.

Cover the mixing bowl and let the dough rise in a warm spot until doubled in size, about 1.5 to 2 hours.

Punch the dough down and transfer it to a lightly floured surface.

Divide the dough into 4 equal pieces and shape into loaves.
